Garlic (Allium Sativum)

Garlic is a species of vegetable belonging to the amaryllaceae family (garlic subfamily). It comes from Central Asia, from where it was spread as a cultivated plant to Europe, over time it went to other continents. The tunicate bulb is made up of a few to a dozen cloves, which are buds with a granary function. The entire bulb is spherical and slightly flattened. As the cloves grow, they press against each other and become angular. The outer surface of the cloves is convex, the inner – concave.

Varieties of garlic

Harnaś

The most popular, without a doubt, is Polish the variety "Harnaś". This is an early harvested variety, wintering in the ground. Its skin adheres strongly to the cloves which makes it hard to peel. It produces a high yield, and its bulbs are suitable for consumption in fresh form. It is also suitable for making preserves.

Ornak

"Ornak" - this is a medium-early variety. It has large white bulbs with purple stripes. It yields abundantly and retains freshness for a long time. Recommended for direct consumption and for the pharmaceutical industry.

Jarus

"Jarus" - is a spring variety of garlic. It has different clove sizes within the bulb. It is distinguished by an exceptionally long storage period (up to a year after harvest).

Arkus

"Arkus" - cropper variety, medium early. Large bulbs with purple-brown cloves.

There are four main varieties of garlic grown in Poland. They differ in the size of the bulb (usually consisting of 4-20 cloves), the timing of planting and harvesting, and in color (albeit only slightly).

Garlic in scientific research

Garlic has been used for thousands of years as both food and medicine. Most people around the world, especially those known for their excellent health and long life, have widely used garlic in their daily diet.

Today, many countries often rely on garlic for the treatment of tuberculosis, bronchial diseases, lupus, pulmonary angina and tracheitis. Garlic is commonly known as "Russian penicillin" because Russian doctors have long used it for treating respiratory disorders, giving children garlic ingredients for pertussis through inhalation. The Russians also used garlic preparations for flu, sore throat, and mouth ulcers.

Garlic is the most recognizable medicinal herb. Much has already been written about the medicinal effects of garlic, and new research is still being published around the world. Garlic is one of the best studied herbal medicines.

It has been shown that the daily use of garlic in the diet has a beneficial effect on the body, especially on the circulatory system and the heart. Scientific data reveal that garlic reduces glucose metabolism in diabetics, slows the development of atherosclerosis and reduces the risk of heart attack. It has been proven that garlic provides the body with protection against cardiovascular diseases.

The American Heart Association Nutrition Committee has officially recognized the potential of garlic in reducing the risk of heart disease and other cardiovascular diseases.

While early research focused on the effectiveness of garlic in lowering cholesterol, new research shows data on a specific garlic extract, referred to as mature garlic extract (garlic that matures over an extended period of time), with very promising results in protecting arteries from injury related to oxidative damage.

Naturally occurring oxidative processes in our body play a key role in aging and disease, including cardiovascular, neurodegenerative, inflammatory, and cancer diseases.

Ripe garlic extract has been shown to protect arteries (due to its antioxidant properties), which means it stops free radicals (unstable molecules) that can cause damage to the arteries. Often left unchecked, free radicals can cause hardening of the arteries and heart disease.
Mature garlic extract has been shown to protect against oxidant-induced diseases, acute damage from aging, radiation and chemical exposure, and long-term toxic damage.

Garlic preparations have been shown to lower cholesterol and triglycerides in serum, which are major risk factors for cardiovascular disease, by inhibiting their biosynthesis in the liver and by inhibiting the oxidation of low-density lipoprotein (LDL).

Protecting LDL cholesterol from oxidation caused by free radicals is one way to prevent the development of atherosclerosis. Oxidized LDL damages the cells lining the blood vessel, which increases the deposition of plaque-forming cholesterol in the vessel wall. Mature garlic extract has been shown to protect LDL cholesterol from oxidation and prevent cell damage in blood vessels.

Exposure to toxic substances lowers the level of glutathione in the body. The extract of mature garlic, through its antioxidant action, strengthens cellular antioxidant enzymes and increases the level of glutathione in cells. Scientists and nutrition-oriented doctors believe that maintaining high levels of glutathione, a powerful antioxidant used by cells throughout the body, can be tantamount to good health.

What is garlic for?

Garlic for lowering blood pressure

Garlic inhibits the action of the enzyme ACE, which is responsible for regulating blood pressure. Scientific studies have shown that regular consumption of garlic can reduce blood pressure by up to 10%, which effectively prevents heart attacks.

Garlic for weight loss

Garlic affects the digestive system, i.e., it accelerates and intensifies the secretion of bile and accelerates the work of the intestines, thereby preventing the formation of unpleasant bloating.
